Hi-Perf: the high-performance mould for lactic curd

In 2016, Servi Doryl is launching the Hi-Perf mould, of which the perforations were designed specifically to accelerate the draining of the whey while still reducing curd loss. Tests conducted on milk curd cheeses, such as goat's cheese, confirm several points gained in yield (quantity of cheese obtained per litre of milk used) and a return on investment in under 3 years. Servi Doryl will be showcasing this patented innovation at the CFIA Rennes trade fair from 8 to 10 March 2016 and will be participating in the Innovation Trophies on this occasion.
